On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Sergio’s Taco Shop” located at Av. las Palmas 5090, Las Palmas, 22106. On this occasion, he tried two tacos: a mixed taco with beef meat and head priced at $2.25 dollars ($45 pesos) and a tongue taco priced at $3 dollars ($60 pesos).
Mixed Taco
This taco has maciza (lean meat) and beef head, onion, cilantro, and is served on two corn tortillas. This taco has a little bit of broth from where the meat is cooked. The tortillas’ size is small, like the ones that are used for adobada tacos.
When he took his first bite, Chef Danny claimed that the meat was hydrated well as it had its own juice; it also had a very soft texture that breaks down inside the mouth, but its saltiness level was a little high. The tortillas ”were not as good as they should be” for our host, as they were neither fried nor soft, and they felt somewhat hard. Another negative point was that there was no salsa. This is why this taco gets a rating of 7.6.
Price: $2.25 dollars ($45 pesos)
Tongue Taco
This taco has beef tongue, cilantro, onion, matcha salsa, and is served on two corn tortillas. The first thing to note about this taco was how nice the salsa looked, as Chef Danny claimed that it looked like it had a lot of flavor. It also had several different seeds.
When he tried the taco, our host stated that this taco had a great combination due to the softness of the tongue meat which had a great flavor. The tortillas were actually fried and the sesame and peanut’s texture combined with the matcha salsa created a great contrast. This is why this taco gets a rating of 8.6.
