On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Carnitas Pig League” located at Calz. Defensores de Baja California 1333, Buena Vista. On this occasion he tried two tacos: a pork mix taco and a maciza with pig skin taco, both priced at $1.3 dollars ($25 pesos).
Maciza and Pig Skin Taco
This taco has maciza (lean meat), pig skin, watery guacamole, onion, cilantro, and is served on a white corn tortilla. Before he tried it, Chef Danny decided to add some drops of yellow lemon.
The pig skin had the ideal characteristics for this meat, which were a smooth texture and a lot of flavor. However, the maciza was somewhat salty and their aguamole (guacamole diluted with too much water) did not add anything. Though the tortilla had been heated up on the comal, it was somewhat hard and it was lacking in flavor. This is why this taco gets a rating of 6.8.

Pork Mix Taco
This taco has pork belly, lean pork, pig skin, guacamole, onion, coriander, red sauce, purple pickled onion, and is served on a white corn tortilla. The first thing to note about this taco is that it had more ingredients, which is why our host was curious if they would change or have a greater influence on this taco when he took his first bite.
When he tried it, Chef Danny said that the crunchiness and sourness of the pickled onion added to the onion and cilantro helped this taco’s protein. The maciza had the same problem again as it was somewhat salty. The pig skin and the pork belly had a soft texture, demonstrating that they been cooked for the right amount of time. Just like the previous taco, the guacamole ended up being a negative, and this is why this taco gets a rating of 7.2.
