This Thursday, on the newest episode of Una Mordida Tacos Tijuana, Chef Danny Betancourt went to “Carnitas El Clavo” located at Corredor Tijuana - Rosarito 2000 s/n, Río Tijuana 3a. Etapa. Here he tried two tacos: a maciza (lean pork) taco and a surtida (mix of pork bits) taco, both priced at $1.10 dollars ($22 pesos).
Maciza Taco
This taco has maciza (lean pork), cilantro, onion, huevona sauce (tomato with jalapeño chili pepper), and is served on two corn tortillas. The first thing Chef Danny noticed about this taco is that even though it had two tortillas, they were medium-sized and had been griddled a little bit.
When he tried the taco, Chef Danny found out that the sauce was quite spicy. The meat had a soft texture and good flavor. Since the tortillas were not very thick, they did not overwhelm the taco, but when he took a second bite, it was a little drier. This is why this taco gets a rating of 6.1.

Surtida Taco
This taco has a mix of pork bits (lean, maw, and skin), onion, cilantro, green salsa, and is served on two corn tortillas. When he took his first bite, Chef Danny claimed that this taco had more flavor and was less dry than the previous one due to the fat from the pig maw and skin.
The salsa wasn’t spicy, but it had a good flavor. Chef Danny explained that its flavor was similar to watery guacamole. The tortillas withstood the taco as they didn’t break and the sauce benefitted the dish, generally speaking, by giving it freshness and not overwhelming with its spiciness. This is why this taco gets a rating of 7.0.
