Winery Casta de Vinos has recently presented one of its many exceptional wine creations: Pitaya. At a wine tasting that took place during the Baja Window to the South show, renowned sommelier Romina Mendoza invited us to explore the distinctive features of this unique drink: full of flavor and made to support a noble cause.

Adding a special significance to each bottle, Pitaya Wine honors all the warriors who fight and have fought breast cancer. This handcrafted wine uses a grape skin contact process which is what gives it its unique color.

During this tasting, Romina highlighted the drink’s dairy touches and noticeable peach flavor, accompanied by subtle white flower scents. "It is a very scented wine. When it gets into your mouth it doesn't feel sweet, it cloaks your tongue," she said, adding that it has a refreshing acidity that invites you to keep tasting, with raspberry touches to balance its profile.

This wine is perfect for conversations and to pair up with entrées, tapas, and salads. However, Romina has cautioned against combining it with meat or desserts as it could detract from their delicate flavors. Though she would prefer it a little fruitier, she recommends it as the excellent start of any meal.
