On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos de Birria El Paisa” located at Valle de la Trinidad, Matamoros Norte. On this occasion he tried two tacos: a birria taco priced at $1.25 dollars ($25 pesos) and a quesabirria (birria with cheese taco) priced at $2.5 dollars ($50 pesos).
Quesabirria
This taco has birria meat, onion, cilantro, asadero cheese, red salsa, and is served on two handmade corn tortillas. Unlike other quesabirrias, the cheese was wrapped around the meat, completely enveloping the protein.
Though the tortilla did not withstand the weight of the ingredients, the meat had a very soft texture and a great, not-greasy light flavor. This taco had quite a peculiar taste, since the first thing one tastes is the cheese and vegetables, and then you discover the meat. This is why this taco gets a rating of 7.2.

Birria Taco
This taco has birria meat, onion, coriander, red sauce, and is served on two handmade corn tortillas. The first thing to note about this taco is that the tortillas were fried. Danny decided to add a little bit of sourness with some lime juice.
The taco’s size was good, since it wasn’t very small. The first thing Chef Danny said after he took his first bite is that the birria was so light in flavor that it wouldn’t make you burp even if you ate several of these tacos, even with how it was seasoned. The salsa was quite spicy. The bad thing about this taco was that the tortillas could not withstand the humidity and the weight (just like with the quesabirria). This is one of the most important and essential things for any birria taco, which is why this taco did not pass the tortilla test and gets a rating of 6.1.
