Miguel Ángel Badiola, declared the gastronomic event “Taste of Tijuana” was a more than positive balance, in a business dialogue he declared:
I would like to highlight the enormous challenge that it meant, for the entire CANIRAC Baja California team, to organize the First International Gastronomic Congress "Sabor a Tijuana", a great event in which we put all our effort, creativity and disposition.
A week after the end of the congress, I want to acknowledge the support of each and every one of our sponsors, as well as the twenty-third Tijuana City Council, through SEDETI.
We were motivated to publicize the gastronomic offer of our beloved city and our beautiful state, so we believe that "Taste of Tijuana" is already one of the most important gastronomic events in the world, as qualified by the international chefs who visited our city.
The leading exponents of the world gastronomic field confirmed our culinary level and the quality of the ingredients we use, such as field and sea products, as well as beef, recognized as the best in Mexico.
Attendees also noticed the growth of craft beer and Baja California wines, which have positioned us as an important destination for foreign visitors, mainly from the United States.
Although innovation is a key piece, we do not want to recognize that without the past there is no present and today's achievements are partly due to visionary men and women who bet on gastronomy such as Tana Plascencia, Ricardo Martínez, Felipe Pavlovich, Natalie Matteotti, Domenico Boccaccio, Adrián Pedrín, Jesús María Lopez and Leopoldo Bórquez, to mention a few distinguished Tijuanenses.
As CANIRAC, we are satisfied by the positive impacts of our first festival where the flavors, colors, blends and cultures set the tone that should be repeated in 2021, as international chefs expressed their desire to return.
Chefs Michelins participated in the great event and with the distinction of Sol Repsol, among the participants are: Alvaro Clavijo and Harry Sasson, both recognized leaders of Colombia.
Many chefs participated from: Spain, Germany, Italy, Portugal, Chile, Colombia, Panama, Uruguay, Argentina, USA and Mexico
Another point was the participation of young gastronomy students who had access to knowledge taught by world-class professionals, such as Dr. Alexander Scherer, a German chef who is a coordinator of the School of Gastronomy at Universidad Anáhuac, who offered scholarships to Conalep school students interested in culinary art.
So, reflecting on what was "Taste of Tijuana", I can only thank those who were part of this effort that, I am sure, has put Baja California in the world eye, and Tijuana as the protagonist.
Finally, CANIRAC expresses its special thanks to Luis Cetto who received all the chefs and Eng. Jorge Hank Rhon in his wine region, and for all the facilities that he gave us in this tangible icon of the history of Tijuana, as is Hipodromo de Agua Caliente.
