The opening of Maximiliano Bistro marks the beginning of a new chapter in Chef Zamora's life: this is a space that promises to be a space where culinary excellence and hospitality unite into a unique sensory experience, a clear and creative concept for contemporary Mexican cuisine.

Its menu has been carefully put together by mixing classic, fresh, and intense flavors with modern techniques, which are then presented in dishes with impeccable aesthetics. The fact that it was Chef Ernesto's birthday made the inauguration even more exciting as he was serenaded by lounge music from DJ Goshi. His friends, colleagues, and clients appreciate and respect him not only because of his gastronomic talent but also because of his generosity and commitment with the community, as he has supported several philanthropical causes in Tijuana.

I am very excited that we are gathered here today. Maximiliano Bistro is the result of efforts, work, and dedication, and I cannot think of a better way to celebrate my birthday than by inaugurating this project with all of you.

Chef Ernesto Zamora is a successful entrepreneur from Culiacan, Sinaloa, who has lived in Tijuana, Baja California, since he was 18 years old. Zamora has a Master's Degree from the Culinary Art School and a Master's from Escuela de Pastelería (Pastry School) del Gremio de Barcelona (EPGB). In addition, he has a Bachelor's Degree in Communication Studies with a Master's in Senior Management and he will soon obtain a Doctorate in International Business.
