Somewhat salty, but delicious birria at “Birria La Baja” gets a rating of 8.2

Though the birria was a little too salty, its seasoning and the handmade tortilla saved the day

On this new episode of “Una Mordida Tacos Tijuana”, Chef Danny Betancourt went to “Birria La Baja”, located at Av. Cochimies, Paseo del Río Tijuana 3ra Etapa, where he tried a quesabirria priced at $5.14 dollars ($90 pesos) and a birria taco priced at $1.71 dollars ($30 pesos).

Quesabirria

This quesabirria (birria with cheese taco) was made with a big handmade tortilla, Monterrey Jack cheese, birria, onion, and finely cut cilantro. Chef Danny was delighted by the meat’s softness, claiming that it was very smooth; in addition, its seasoning was excellent, but he did note a slight excess of salt, though nothing serious.

As the birria did not have a lot of grease, this meant that it was seasoned well. Regarding the tortilla, Chef Danny loved its thickness and its maize flavor. Its cheese was very fatty which went well with the meat, which is why this taco gets a rating of 8.4.

Birria Taco

This birria taco had onion and finely cut coriander on a tortilla that was fried quite well, both outside and inside. It had a bigger size compared to a normal adobada taco tortilla.

Though Chef Danny enjoyed the fried tortilla, the excess of salt was even higher this time which is why he had to add lime to decrease the saltiness. He also added homemade salsa, which was not spicy at first but then he claimed it had a “delayed effect”, because the spiciness was then too much, though Chef Danny said it had a good flavor. This is why this taco gets a rating of 8.2.
