On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos El Sinaloense” located at Calle Alba Roja 12888, Hipódromo Dos. On this occasion he tried two tacos: a carne asada taco and a head taco, both priced at $1.5 dollars ($30 pesos).
Carne Asada Taco
This taco has carne asada (grilled beef), onion, cilantro, guacamole, huevona sauce, and is served on two packaged corn tortillas. Before he tried it, Chef Danny stated that the amount of guacamole served for this taco was quite generous, and there was even more guacamole than the size of the tortilla which was small.
The sauce had a sweet touch and the spiciness level was quite low. However, since it was quite liquid it provided some humidity both to the meat (which was marinated well) and the tortilla. Since the tortilla was store bought, it didn’t help the taco at all and it was a little hard. The guacamole was a plus here, since it was pure avocado flesh. This is why this taco gets a rating of 7.2.

Head Taco
This taco had beef head, onion, cilantro, green sauce, and is served on two packaged corn tortillas. When he took his first bite, Chef Danny highlighted the importance of cleaning beef head appropriately and not leaving bone pieces since if one bites it, one can break a tooth or swallow a bone which is very dangerous, especially if it is broken in a particular way.
On this taco, Chef Danny found a splinter from the bone, which he moved aside. The green salsa also had a sweet taste and the tortillas, just like in the previous taco, were hard and dry. The meat had no kind of seasoning. This is why this taco gets a rating of 5.2.
