On this episode of Una Mordida Tacos Ensenada, our host, Chef Danny Betancourt along with his friend Eddie Reyes went to “Tacos Yumano” located at Carretera Federal 3 Km. 90.8 in Valle de Guadalupe. Here they tried two tacos: an oyster taco and a pork belly taco, both priced at $4.5 dollars ($90 pesos).
Pork Belly Taco
The first thing he noticed about this taco was the size of the blue tortilla which was served, according to Chef Danny, in a “sampling size”. The taco has pork belly, avocado, and fried scallions. Eddie said that even though they are in Valle de Guadalupe, the taco was still very small and the tortilla was too thin for his taste.
Danny said that there are some proteins that require a smaller tortilla such as an adobada taco with its very intense flavor. In this case, the pork belly was a very big piece of grease with super crunchy skin with very soft meat. Our host noticed a citric touch in the protein which gave it a nice flavor. Eddie gave it a rating of 8.3 and Chef Danny gave it a rating of 8.1.

Oyster Taco
This taco’s presentation was something different since it was wrapped and fried on a flour tortilla. Inside, the oysters were covered tempura style with vegetables and next to it the onions were stewed. When they both took their first bite, they were surprised by its great flavor.
On this plate, there were a few drops of a dark gray sauce which they both compared to the flavor of a spring-roll of chunkun. They both stated that the tortilla had a very nice flavor and the combination of ingredients had created a great taco. Eddie gave this taco a rating of 9.0, Danny gave it a rating of 8.8.
