Baja California’s gastronomy is renowned worldwide: Baja Window to the South

They also spoke about Mexican gastronomy as World Heritage Food

Baja Window to the South invites people that have had great relevance in Mexico and Baja California, the kind of people that help to spread the word about the attractions this state has to offer, from cultural and artistic expressions to gastronomic ones.

An example of this is Pablo Barragán, an expert in Mexican gastronomy who shared with hosts Olga Sánchez de la Vega and Scott Koenig, how he fell in love with researching Mexican cuisine. He even said that he was certain that if we all knew the richness and components that Mexican cuisine has, we would all be better Mexicans due to the history and tradition behind all of it.

Barragán also shared how UNESCO declared Mexican cuisine as World Heritage Food in 2010, after being presented with a banquet prepared by traditional cooks from the Purépecha Plateau in Michoacan. These events reflect how gastronomy as well as Mexican traditions, culture, and roots can unite a country.

Pablo also added that Baja California is renowned worldwide due to its gastronomic variety, in contrast with some time ago where it was considered that Mexican food only came from states like Oaxaca or Michoacan. He said that at least once in a lifetime, one should try Mexican dishes made by traditional cooks so as to appreciate Mexican gastronomy in its totality. He concluded his interview by saying that, for him, one lifetime is not enough to learn everything there is to know about Mexican cuisine.
