It is known that Tijuana is a city where weather varies from morning to noon and from afternoon to evening, due to that, craft breweries can present different recipes, although we are not in the right season to taste that style. The busiest border in the world, allows us to enjoy a session IPA, a witbier or a Pale Ale, regardless of the time or weather forecast.
This Friday, we will start our Baja Beer Tour section, in which we will be presenting you different beers from Baja California that you must know. In this edition we will talk about Tony the Tiger which you will find in La Republica de Hops.
Alberto Parra and Isaías Medina, creative partners of the La República de Hops brand, tell us that it is important to believe in the new proposals presented by brew masters, who do not have their own brand and work in some breweries such as head brew masters.
This is the case of Tony, also known among his friends as Tiger, who worked as a brew master at SCI-HOP before joining the team of La República de Hops. With great talent and experience, they gave him the freedom to cook beers with his own touch and technique, taking care of only the aspects they were looking for for each beer.
Being derived from the recipe of IPA from La Republica, Tony and the partners sought to handle only two types of hops for the session IPA, Mosaic and Simcoe, unlike the IPA that handles five different hops. Also, they change yeast for each new batch of beer. As for the malt they use, they decided to use only two types for the final session IPA recipe, reducing the types of malt.
This resulted in Tony the Tiger, a beer with a light coppery color and golden against the light, with little body and good foam, light to drink, even with 5.4% ABV (Alcohol By Volume, used to measure alcohol in beer) and 70 IBU (International Bitterness Units, units used to measure bitterness in beer).
They use a dry hop to make it a little drier in mouth, which gives you the impression of freshness and that it is even easier to ingest, citrus and floral notes with a slight sensation of alcohol.
A perfect beer to pair with a fresh tuna tostada with ponzu sauce or piglet and lamb tacos.

At the moment, The Republic of Hops is located within Cervecería Madero on Avenida Colima and Brasil Street, on Colonia Madero - Cacho, in front of restaurant Mantequilla, La Cacho.
Opening hours: from Wednesday to Sunday, from 3:00 pm to 11:30 pm. Pints are priced at $63 MXN ($3.40 USD) for most styles.

Good seasonal beers are coming and for the brewery Madero line. Their tasting room is under construction, in which they will have tastings, they will tell you about the process of each beer and they will also give courses so that you can make your own craft beer, but we will discuss about this in more detail later.
