On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos El Paisa” located at Av. Paseo del Lago 19615. On this occasion he tried two tacos: a birria taco priced at $1.4 dollars ($28 pesos) and a quesabirria (birria taco with cheese) priced at $2.5 dollars ($50 pesos).
Quesabirria
This taco has birria meat, onion, cilantro, cheese, salsa, and is served on two fried packaged corn tortillas. The first thing to note about this taco is that both tortillas were drenched in grease so that they could be fried. Their thickness (to the point that they weren’t closing properly) as well as the long cheese string was mouth-watering for our host.
When he tried it, Chef Danny said that the birria was full of flavor due to its seasoning. The cheese enveloped the soft meat beautifully and created a contrast of textures against the fried tortillas. The sauce was a little spicy. The broth poured at the end made the outer tortilla a little humid and it broke. This is why this taco gets a rating of 8.9.

Birria Taco
This taco has birria meat, onion, coriander, red sauce, and is served on two fried corn tortillas. When he took his first bite, Chef Danny said that the highlight was the sauce. On this taco, the taco’s spicy salsa burned him more, to such an extent that he started to sweat.
Though the taco is fried, it wasn’t dry due to the meat being so humid and its softness. In addition, the tortilla had an intense flavor due to the grease used so that it could be fried. This is why this taco gets a rating of 8.6.
