On this episode of Una Mordida Tacos Tijuana our host Chef Danny Betancourt went to “Birria al Horno Don Chinono” located at Callejón Rio Bravo 9892, Colonia Revolución. On this occasion he tried two tacos: a traditional birria taco priced at $1.75 dollars ($35 pesos) and a quesabirria taco priced at $3 dollars ($60 pesos).
Quesabirria Taco
This taco has two corn tortillas (with the outer tortilla more fried than the inner one), cheese, onion, cilantro, beans, red salsa, and meat which was fried. This is because it is griddled before being served with the cheese on the tortilla. When he took his first bite, Chef Danny highlighted the cheese which created a long string when melted and had a good flavor.
Since the meat was fried, its texture was too dry for our host. He was also not able to taste its flavor too much because the cheese overshadowed it. The salsa was not spicy despite its color and consistency suggesting the opposite. This is why this taco gets a rating of 7.2.
Price: $3 dollars ($60 pesos)
Birria Taco
This taco has birria that is served directly from the pot (unlike the previous taco), onion, coriander, sauce, beans, and two corn tortillas, with the outer one fried and the inner one softer. When Chef Danny tried this taco, he noticed a difference regarding the flavor.
He was able to distinguish the meat’s adobo immediately. A little bit of broth was added when all the ingredients were on the taco, making the birria juicier. The texture differences of the tortillas was something that Chef Danny really liked. He described this as Jalisco-style birria flavor. When it is cooked in an oven, it gives it some spice notes, with the other ingredients becoming more prevalent. In addition, the cooking time gave the meat a soft texture, which made it break down in the mouth. This is why this taco gets a rating of 8.9.
