On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos de Chile Relleno La Güera“ located at Internacional 921, Zona Urbana Rio Tijuana. On this occasion he tried two tacos: a tripe taco priced at $1.94 dollars ($25 pesos) and a stuffed pepper taco with carne asada priced at $3.33 dollars ($60 pesos).

Tripe Taco

This taco has tripe, beans, onion, cilantro, grilled onion, green salsa, guacamole, and is served on a handmade corn tortilla. One of the things to highlight about this taco is that the handmade tortilla was quite thin.

When he took his first bite, Chef Danny claimed that the tortilla was humid appropriately as it broke down inside the mouth and had a good maize flavor. On the other hand, the tripe was quite salty and its texture was soft, which is not how Danny likes this protein (fried outside, soft inside). The grilled onion was white and caramelized making it a good combination, but our host did not really like it that much. Both the salsa and the beans were a good plus as they combined well with the tripe. This is why this taco gets a rating of 8.3.

Stuffed Pepper Taco with Carne Asada

This taco has stuffed pepper, carne asada (grilled beef), onion, cilantro, beans, grilled onion, morita chili pepper sauce, and is served on a handmade corn tortilla. Something to note about this taco is that, just like the previous taco, this tortilla had a very big size.

When he tried it, Chef Danny said that the morita chili pepper touches were quite present in the salsa, as it had a very similar flavor to chipotle sauce in adobo. The stuffed pepper was a güerito chili pepper with creamy cheese. Unlike the previous taco, the grilled onion made a good contrast with the meat and the pepper creating a good flavor. This is why this taco gets a rating of 8.9.
