“Carnitas El Tiki” in Tecate gets a rating of 6.7 for their dry tacos

This taqueria didn’t do very well, which is why both of their tacos got the same rating

On this episode of Una Mordida Tacos Tecate, our host Chef Danny Betancourt went to “Carnitas El Tiki” located at Boulevard Universidad. On this occasion he tried two tacos: a maciza taco and a surtida taco both priced at $1.25 dollars ($25 pesos).

Maciza Taco

This taco has maciza meat (low-fat, fibrous pork muscle), cabbage, a Mexican husk tomato sauce with charred bird beak’s chili, and is served on two handmade corn tortillas. Before he took his first bite, Danny noticed that the meat had a reddish hue and when he tasted it, he noticed that it was too dry due to the two very thick tortillas.

Though the meat had a good flavor it was quite dry, since it had been reheated on the griddle, causing its humidity to disappear completely. Our host would have liked a greasier and oilier flavor from where the meat was cooked. The sauce had a good flavor and wasn’t too spicy. This is why this taco gets a rating of 6.7.

Surtida Taco

This taco has “surtida” pork (meat from several body parts of the animal, including maciza and skin), guacamole sauce with Mexican husk tomato, cabbage, and is served on two handmade corn tortillas. Something to note is that the tortillas had a good size, meaning the tacos weren’t small and were humidified well, as well as having an intense maize flavor.

This taco was also dry because this type of meat tends to be less humid. Danny, however, was able to detect the maciza and pig skin, but not the rib or belly, which seemed to be lacking. The protein flavor was also lacking which is why this taco gets a rating of 6.7.
