"Fauna" restaurant, located in Valle de Guadalupe in Baja California, was announced by Latin America's 50 Best Restaurants as the 2020 winner of the Miele One To Watch Award for being an emerging restaurant in Latin America.
Chef David Castro Hussong and pastry chef Maribel Aldaco Silva will be honored at a virtual awards ceremony of Latin America's 50 Best Restaurants 2020 on December 3 at 3:00 p.m. (Mexico City time).
The Miele One To Watch is the third in a series of special awards announced prior to the virtual ceremony, in order to support restaurants in the face of the current pandemic crisis caused by COVID-19.
William Drew, Content Director of Latin America's 50 Best Restaurants, said, "In these difficult times for the restaurant industry, we are proud to recognize a rising star in the culinary arena. Fauna's experimental menus, respect for local products and a unique approach to community dining have attracted fans from all over Mexico and beyond".
If you haven't heard of Fauna yet, maybe it's time to visit them, because in addition to offering an experimental tasting menu that changes daily, it uses local ingredients and even several come from the chef couple's own garden.
And although they don't have the fruits that characterize other regions of Mexico, this Baja California restaurant uses Baja California products such as figs, dates and honey in its desserts.
Dr. Axel Kniehl, Executive Director of Marketing and Sales of Miele, said he was pleased to recognize this restaurant, adding that "David Castro and Maribel Aldaco are redefining excellence in gastronomy by combining indigenous cuisine with a creative twist and ingredients grown in the desert, served in their purest form. The approach of driving improvement and innovation while at the same time building on tradition aligns perfectly with us at Miele".
This is how Fauna joins the prestigious list of Miele One To Watch Award winners in Latin America, including Celele in Cartagena, Colombia in 2019; Manu in Curitiba, Brazil in 2018; Chef Felipe Bronze in Río de Janeiro, Brazil in 2017; Alcalde in Guadalajara, Mexico in 2016; I Latina in Buenos Aires, Argentina in 2015; Ambrosia in Santiago, Chile in 2014; and Remanso do Bosque in Belem, Brazil in 2013. The award precedes the announcement of the Estrella Damm Chefs' Choice Award on November 17 and follows Narda Lepes' nomination as Latin America's Best Female Chef 2020 and Janaina Rueda's receipt of the American Express Icon Award 2020.
