On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos de Birria El Paisa” located at Blvd. Cucapah 2604, Jardín Dorado. On this occasion he tried two tacos: a classic birria taco priced at $1.25 dollars ($25 pesos) and a birria with tripe (“campechano”) taco priced at $2 dollars ($40 pesos).
Birria Taco
This taco has beef birria, onion, cilantro, charred sauce, and is served on two packaged corn tortillas. The tortillas were fried like in a normal birria taco, but they were very small. Chef Danny called it a “sample taco” due to this.
When he took his first bite, Chef Danny said that the salsa was spicy, which is why one should be careful when adding it. The meat had a good flavor as well as the tortillas as, despite their size, the corn taste was quite present and since it had some birria grease, its flavor was enhanced. When he took his second bite, he had finished the taco, though its ingredients got very high grades. This is why this taco gets a rating of 8.3.

Campechano Taco of Birria with Tripe
This taco has beef birria, beef tripe, onion, coriander, charred sauce, and is served on two packaged corn tortillas. When he took his first bite, Chef Danny praised the salsa again. Despite it being very spicy, it had a great flavor.
Though the tortilla was from a store bought package, it had a good maize flavor. Chef Danny thinks this is because it is a different tortilla brand than the one usually used or because the tortilla was drenched in birria grease which increases its flavor, due to the condiments. The meat and tripe had a very soft texture. Danny described this taco as “small, but with a burst of flavor” which is why it gets a rating of 8.6.
