Caesar’s Launches Beer to Complement Iconic Salad

Caesar’s has partnered with Cervecería Insurgente to create a unique brew that complements their iconic dish.

The iconic Caesar’s restaurant has launched a new beer in collaboration with Cervecería Insurgente, promising the perfect pairing for its legendary Caesar salad, a dish born in Tijuana.

The idea for this partnership came about after the beer that once accompanied the dish—brewed by Cervecería Tijuana—was discontinued. It was also a response to constant requests from diners eager for a beer that would complement the restaurant’s culinary delights.

“Our guests asked for it time and again, so we teamed up with the Insurgente crew to craft a recipe that would become our new house beer,” said Jaime Julián Plascencia, CEO of Grupo Plascencia.

The result? Caesar’s Beer, a smooth blonde ale with 4.5% alcohol.

As described on social media, the beer is a tribute to the restaurant’s history—rooted in the United State’s Prohibition era of the 1920s—and to the Caesar salad itself, which just turned 100 years old.

Damián Morales, co-founder of Cervecería Insurgente, shared that he meticulously crafted the beer using Pilsner malt, subtle bread notes, and a hint of pine aroma, resulting in a balanced and refreshing brew that pairs wonderfully with the Caesar salad and will be served exclusively at the restaurant.

Caesar’s salad: a culinary staple of Tijuana

The legendary Caesar salad marked its 100th anniversary last July, and to this day, chefs continue to prepare it using the original recipe created by César Cardini in his downtown Tijuana restaurant.

Though some believe the salad was created on a whim, Rosa Cardini, daughter of César Cardini, has refuted this notion, explaining that her father did not improvise but rather, as an experienced chef, crafted the dish with intent and expertise.

With this new brew, Caesar’s reinforces its role in Baja California’s culinary heritage.
